Bud Of Joy has invested in automation equipment so as to improve productivity. For example, the bread proofer is now used to proof the dough according to the pre-programmed timing, allowing the baker to sleep longer instead of waking up at 4 or 5a.m. each day to proof the dough.
Meanwhile, the bakery continues to do the delicate things by hand. Shaping of the breads, as well as folding of the Chiffon Cakes is carefully done by the baker. Since no baking powder is used for the Chiffon cakes, folding is done by hand with care and precision, as it will determine whether the cake eventually sinks or rises nicely after going through the oven. Similarly, special care is taken for the 100% Wholemeal Breads as no emulsifiers or bread improvers are used.
